caramelized leek soup

WHAT YOU NEED:
2 tbsp butter
3 leeks, sliced
2 tbsp brown sugar
roasted garlic bulb
1 small onion
1/3 cup white wine
paprika
1 small potato
2 cups vegetable stock
1/2 cup cream
salt + pepper
How to make it:
cook leeks + onion slowly (20-30 mins, let them golden
stir in brown sugar
once they are caramelized, stir in garlic
increase heat to medium, stir in wine, add potato, paprika and stock (simmer until soft)
blend until smooth
strain using a fine mesh seive to remove fibers
add cream and adjust salt + pepper
garnish w/ warmer toned edible flowers and crispy shallots
