caramelized leek soup

WHAT YOU NEED:

  • 2 tbsp butter

  • 3 leeks, sliced

  • 2 tbsp brown sugar

  • roasted garlic bulb

  • 1 small onion

  • 1/3 cup white wine

  • paprika

  • 1 small potato

  • 2 cups vegetable stock

  • 1/2 cup cream

  • salt + pepper

How to make it:

  • cook leeks + onion slowly (20-30 mins, let them golden

  • stir in brown sugar

  • once they are caramelized, stir in garlic

  • increase heat to medium, stir in wine, add potato, paprika and stock (simmer until soft)

  • blend until smooth

  • strain using a fine mesh seive to remove fibers

  • add cream and adjust salt + pepper

  • garnish w/ warmer toned edible flowers and crispy shallots
