green pea soup

WHAT YOU NEED:

  • 1 tbsp olive oil

  • 2 spring onions

  • 2 cups peas

  • 2 cups vegetable stock

  • 1/2 cup cream

  • salt + pepper

  • squeeze of lemon

How to make it:

  • sweat aromatics by cooking spring onions in olive oil on low heat (don’t brown)

  • add peas and stock and simmer for 5-7 mins

  • blend until completely smooth

  • strain through a fine mesh sieve

  • add cream and lemon and salt + pepper

  • garnish with basil oil (blend basil + oil + pinch of salt, let sit for 6-8 hours then strain)

  • additionally garnish with edible flowers
