green pea soup

WHAT YOU NEED:
1 tbsp olive oil
2 spring onions
2 cups peas
2 cups vegetable stock
1/2 cup cream
salt + pepper
squeeze of lemon
How to make it:
sweat aromatics by cooking spring onions in olive oil on low heat (don’t brown)
add peas and stock and simmer for 5-7 mins
blend until completely smooth
strain through a fine mesh sieve
add cream and lemon and salt + pepper
garnish with basil oil (blend basil + oil + pinch of salt, let sit for 6-8 hours then strain)
additionally garnish with edible flowers
