GRAPEFRUIT CHICKEN PICATTA

WHAT YOU NEED:

  • 2 grapefruits

  • Capers

  • Brown sugar

  • Mint, Parsley, Basil, Dill, Chives

  • Chicken

  • Salt + Pepper

  • Flour

How to make it:

Sauce

  • Prep the grapefruit by peeling it and segmenting it into a bowl. Squeeze all of the juice in too

  • Prep the herbs by mincing a bunch of all of them up and put in a different bowl

  • Throw some capers in and set to the side

  • Leave this now til you’ve cooked your chicken. Go down to the chicken section. Do all of that then come back

  • Have you cooked your chicken? okay

  • Now. Leave about 2 tbsp of oil in the pan and add in 1/4 - 1/2 stick of butter and let brown

  • Add in your grapefruit and capers. Add some brown sugar to balance out the bitterness

  • Let cook on med-low heat till it thickens a little

  • When done, plate the chicken and spoon sauce onto the chicken cutlets. Top with the herb mixture


Chicken

  • Slice your chicken breasts into thin cutlets

  • Pat them dry and salt + pepper them

  • Coat each side in a thin + even layer of flour and set aside

  • Fill your pan with a thin layer of olive oil and bring up to med-high heat

  • Cook each chicken until they are golden brown

  • Remove from the pan and let cool on a wire rack
