mexican street corn

ESQUITES (off the cob)

WHAT YOU NEED:

  • 5-6 ears of corn

  • Red onion

  • Cilantro 

  • Mexican crema 

  • Lime 

  • Paprika, chili powder, salt, pepper

  • Cotija cheese

How to make it:

  • First grill/cook you corn. Then shave it all off the cob.

  • In a bowl with your corn, add diced red onion (I dice them up small), chopped cilantro, salt + pepper, paprika, chili powder, lime zest + juice, and mexican crema.

  • Top it off with some cilantro and cotija cheese.
